To be fair, you should play both Vamp and Clot, but yeah, I’ve been playing Vamp for a long time. The QT builds are too poor to afford it though.
I prefer Parasite over Clot and I see no reason to play Clot in my local meta =).

Against decks packing meat damage just make money and don’t make mistakes. I faced Butchershop twice and beat it both times. I don’t want to play a card that’s dead a lot of the time unless its Clot

Running through multiple raven to get a breaking news isn’t something you want to do with kate.
That relies a hell of a lot on luck of the draw; I played a butcher shop that drew almost all their sweeps, their hedges, their restructures and scorch tricks despite being around 20 cards into the deck. I’m running plascrete, and he was still able to kill me through it.
Yeah, but you’re relying on a card you can’t tutor to beat a deck you can beat anyway.
Basically, you don’t want a card that you won’t often draw when good play can beat the deck. Contrived situations can be beaten with Plascrete, but contrived situations being beaten with contrived un-tutorable cards isn’t a new thing, but that doesn’t mean we should play them,
Of course, as with any deck (even if not as overtly), sometimes if they get a good draw and you get a bad draw, they win and you lose. This happens with and without Plascrete, but maximising those numbers to favour you against the field, I feel, involves cutting Plascrete. You can’t win every game, not even with Plascrete.

I know the theory behind the card choice, I mean, I already cut plas from Kate in november last year and only put it back today after more than 6 months running without string attached so give me a break :<.
But then, in a draw happy deck who can get through the entire deck in less than 10 turns, I don’t think it’s that bad to slot a situationnal card. It’s not that I like to play plascrete. In fact, if I could, I would have probably cut it all together but if you expect a lot of Butchershop (which was my case here, in my latest regional), there’s no reason to slot a card who can give make the matchup less of a cointoss.
Well if your meta is filled with virtual resources, foxfire is awesome. If your meta is filled with meat damage, plascretes are awesome. Not every meta is the same.
How do you outmoney butchershop when they tax-ICE R&D (everything but wraparound is at least a 2 swing for barely any rezz cost) and you have to run pretty much every remote to prevent astro/breaking news and potentially clear tags (data raven, guttenberg, …)?
And what about Blue sun? Surely you can’t reliably outmoney them?
Very doable to very easy depending on if you have proco or not. Make sure you maintain curtain wall lock.

The only time Blue Sun can reliably make an OAI + Curtain against kate is by doing it on the first or second turn. After that, it’s almost impossible. You shouldn’t count on that to get your creds in this matchup.
Atman 10? You spend 12-13 credits to install it and another 3 to break 1 CW. After that they never install them as outermost anymore.
They don’t need to make money with OAI CW if they can make you lose 2 Lady tokens and 7 credits for their investment of 1 CW and 1 OAI - thats a good swing for them either way?
Basically what @Calimsha said. Always maintain the ability(SMC/Lady/Stimhack etc) to trash an OAI curtain wall in the same way you can remote lock. It’s obviously a huge dent in their econ if you can deny them this combo not to mention you trash a key piece of ice.
This is fine for Kate her econ and lady counters can outlast Blue sun’s curtain walls and OAI’s.
I feel like Blue Sun’s econ can be very competitive to Kate’s (and sometimes superior). Gambles, OAI, Adonis and maybe even Restructure. Hive taxes lady counters like crazy. The first CW is a large swing no matter if you break it or not (well except if you stimhack it).
…and let’s just add that Stimhacking more than once might not be the most prudent of plans, especially for carapace-less individuals.
On the first round of my latest regional, my opponent put an ice on R&D, put curtain on HQ then OAIed the curtain. My first turn was like : Lucky Find => Lady => Blow the OAI curtain wall. This move pretty much won me the game because after that he was never able to recover : I blew up 2 Hive / 1 Caduceus with Sucker + Parasite and ended winning the game on single access.
Even in the best case scenario (first turn OAI + Curtain), if Kate is able to blow it up, it put Blue Sun in a really terrible situation.
